藻藍蛋白具有鮮艷的藍色色澤，因而可用作食品添加劑，以避免化學(xué)合成物對人體的傷害。

作為天然色素，不但藻藍蛋白本身就是一種營養(yǎng)豐富的功能性原料，而且藻藍蛋白特有的藍色可以和其他天然色素以不同的比例混合，達到其他天然色素所不能達到的著色效果。歐美等發(fā)達國家十分重視藻藍蛋白作為天然色素的開發(fā)。在美國藻藍蛋白被食品與藥品安全管理局(FDA)列為安全性產(chǎn)品。在歐洲，藻藍蛋白被列入彩色食品原料不限量使用。在日本，日本企業(yè)早在十幾年前就從螺旋藻粉中提取藻藍蛋白用作食用色素。在中國臺灣，藻藍蛋白早已取代人工合成色素，用于食品的著色。

As a natural pigment, not only is phycocyanin itself a nutritious and functional raw material, but the unique blue colour of phycocyanin can be mixed with other natural pigments in different proportions to achieve colouring effects that cannot be achieved by other natural pigments. Developed countries such as Europe and the USA attach great importance to the development of phycocyanin as a natural pigment. In the USA, phycocyanin is classified as a safe product by the Food and Drug Safety Administration (FDA). In Europe, phycocyanin is included in the unlimited use of coloured food ingredients. In Japan, Japanese companies have been extracting phycocyanin from spirulina powder for food colouring. In Taiwan, China, phycocyanin has long since replaced synthetic colours in the colouring of food.
