1、性質(zhì)
性狀：白色結(jié)晶性顆粒或結(jié)晶性粉末，無(wú)臭無(wú)酸味，有特殊貝類滋味，味覺閾值0.03%，易溶于水（20℃，35g/mL），不溶于乙醇，分為結(jié)晶丁二酸二鈉與無(wú)水丁二酸二鈉，食品工業(yè)中最常用的是晶體丁二酸二鈉，通常含有6個(gè)結(jié)晶水，其中結(jié)晶丁二酸二鈉在120℃時(shí)完全失去結(jié)晶水。
別名：琥珀酸二鈉，俗稱干貝素

2、實(shí)際應(yīng)用
醬油、醋、辣醬油、調(diào)味湯（料）、醬菜、香腸火腿、魚糜制品等食品中。
1、應(yīng)用在醬菜制作當(dāng)中
1）什錦醬菜　溶液180升，添加干貝素450g
2)喬頭（韭白）　溶液180升，添加干貝素220g
3)醬山野菜（山葵）　山野菜液 10kg，添加干貝素30~40g
4)應(yīng)用在腌制醬咸菜當(dāng)中，原液10kg，添加50g
2、醬油、辣醬油（溶于水中后使用不會(huì)產(chǎn)生不均勻性），180升中添加26-56g和谷氨酸鈉并用，并用時(shí)，用量是谷氨酸鈉的10%-15%，這樣會(huì)非常美味。
3、加工豆醬產(chǎn)品。3.75kg兌約1g左右，味道會(huì)更好。
4、制造合成醋，4%的醋酸溶液180升，加入約350-400g的干貝素,特別是和本公司的單福馬酸一起使用，結(jié)果將會(huì)使強(qiáng)烈的刺激性香味得到中和，而且由于單福馬酸的作用，可以去掉過剩的酸，而產(chǎn)生完美的酸味。
5、灌裝水產(chǎn)物、煮魚及其他相對(duì)谷氨酸鈉的使用量，添加10-20%，能使味道更加美好，特別是貝類罐頭。

干貝素是廣泛存在于海藻和海洋生物的有機(jī)酸鹽, 因有貝類鮮味而得名。干貝素又稱琥珀酸鈉( sodium succinate) , 琥珀酸( sodiumsuccinate) 是鎮(zhèn)驚息風(fēng)的經(jīng)典中藥琥珀的有效成分, 也是體內(nèi)三羧酸循環(huán)的中間代謝物, 其化學(xué)結(jié)構(gòu)與腦內(nèi)神經(jīng)遞質(zhì)γ-氨基丁酸( GABA) 和?；撬犷愃? 具有多種藥理效應(yīng), 其生物活性已有綜述?；瘜W(xué)性點(diǎn)燃癲癇動(dòng)物模型已證明腹腔注射干貝素有抑制作用, 具有藥用價(jià)值。
